From Seed to Cup: Nicaragua Finca Santa Melida

Introducing our newest House Batch Coffee and Espresso

Give a warm welcome to our newly added house coffee on batch and espresso at DOCR — Nicaragua Finca Santa Melida — a beautifully balanced daily drinker with cherry cola brightness, brown sugar sweetness, and a soft apricot lift.

This coffee comes to us from San Juan del Río Coco in Northern Nicaragua and serves as a replacement for our former house coffee, Brazil Vinicius Ignotti. This is our first time bringing coffee from this producer to the U.S., as they’ve historically been more popular in Europe.

Typically, we rotate our house coffee offering anywhere from two to three times a year, depending on our supply and inventory. This marks our third house coffee release of the year, and we’re honored to showcase this producer’s work to our customers.

The Cooperative Behind the Coffee

Santa Melida is one of 12 farms that contribute to the Cooperativa Agropecuaria de Producción Las Victorias del Balcón R.L., a recently formed working relationship between coffee farms in San Juan del Río Coco. While the cooperative itself is fairly new, the farms that make it up have more than 50 years of combined coffee-harvesting experience.

Originally operating as individual farms, the producers chose to form a cooperative to create more opportunity for selling their coffee. Prior to joining forces, they were limited to the local market. Now, as a united organization, they are able to market their coffee more widely and under organic production certifications through OCIA International and Biolatina.

Cooperativa Las Victorias is composed of 12 partner farms situated between 1,200–2,100 meters above sea level, with lots regularly scoring between 85–90 points. The group includes both small- and medium-sized producers, all utilizing sustainable, eco-friendly production systems and thoughtfully producing high-quality coffees.

Process & Varietals

Nicaragua Finca Santa Melida is a washed coffee. Directly after harvest, the producer depulps the coffee cherries, removing the fruit from the seed — what we know as the coffee bean itself.

Because of the washed process, you may notice increased clarity in the cup, along with a bright, pleasant acidity. This balance makes it an excellent choice for our house espresso.

This coffee is composed of Yellow Catuai, Red Catuai, and Caturra varieties, producing a clean, structured cup with a gentle fruit-forward sweetness. Expect a rounded mouthfeel and approachable sweetness — an ideal coffee for your daily routine.

What to Expect in the Cup

Expect a sweet, balanced daily drinking coffee with tasting notes of cherry cola, brown sugar, and apricot. The star anise–like cola flavor is especially prominent, rounded out by a soft apricot sweetness. Whether enjoyed as espresso or batch brew, it’s a comforting yet engaging cup — familiar enough to feel cozy, and complex enough to savor sip after sip.
