ABOUT THE COFFEE

IN FOCUS: Colombia ASOMUJER

Producer
ASOMUJER (Asociación de Campesinas del Sur del Huila) is a women's producer association located in the Timaná municipality in the south of Colombia's Huila department. The group was founded in 2007 by 10 women looking for alternative ways to do business and earn more for their work. Today it has grown to 75 members — activists, single mothers, and producers displaced by conflict — united around a shared goal of producing high-quality coffee and building a more equitable future for coffee growers in their region.

ASOMUJER provides technical support to all of its members throughout the entire production, processing, and sales process, with a commitment to economic, environmental, and solidarity sustainability. Their work extends beyond coffee: through training, capacity building, and ongoing support, they are building lasting economic and social returns for their community.

Varietal
This lot is made up of Castillo and Colombia — two varieties that are workhorses of Colombian specialty coffee, bred for disease resistance and adaptability at altitude, and well suited to the clean, sweet profiles Huila is known for.

Processing
Washed and decaffeinated using the sugarcane (EA) method — one of the most celebrated natural decaffeination processes in specialty coffee. Ethyl acetate derived from fermented sugarcane is used to gently remove caffeine while preserving the integrity of the coffee's flavor. The result is a decaf with the clarity and sweetness of a well-processed washed lot, without the flatness often associated with conventional decaffeination methods.

This level of traceability — a single producer group, a defined region, a transparent process — is still genuinely rare in decaf, and it's something we're always proud to offer.

Cup Profile
Dried fig, dates, and chocolate. Rich and grounding, with a natural sweetness and light fruit that makes this coffee as satisfying as any caffeinated offering on our menu. Clean, approachable, and deeply drinkable.
