This exceptionally limited Dynamic Cherry Geisha comes to us from Finca Los Pozos in Boquete, Panama, in partnership with Creativa Coffee District and our exporting partners at Equation Coffee. A rare Geisha varietal paired with an experimental fermentation process, this coffee is remarkably clean, sweet, and complex, balancing vibrant fruit with the delicate florality that makes Geisha so prized.

In the cup, expect notes of red berries, lime, and hibiscus tea, with a juicy, fruit-forward character and a refined tea-like finish. This is a coffee where variety and processing work together beautifully, amplifying the fruit without overwhelming the nuance of the Geisha.

Producer & Region
Finca Los Pozos is located in Boquete, Chiriquí, one of Panama's renowned coffee-producing regions. This lot comes to us through a partnership with Creativa Coffee District (CCD), a state-of-the-art processing facility and producer collective that serves as a creative hub for coffee producers throughout the region.

CCD works with producers in Boquete, Hornitos, and Renacimiento to source exceptionally ripe coffee cherries, creating opportunities to experiment with micro- and nano-lot processing techniques that explore new possibilities in the cup. Their approach brings together exceptional raw coffee and highly controlled processing, allowing both producers and processors to push the boundaries of what coffee can taste like.

Varietal
Geisha
is one of the world's most sought-after coffee varieties, celebrated for its delicate florality, layered fruit character, and tea-like elegance. Originally traced to Ethiopia, the variety became particularly renowned through its expression in Panama, where high elevations and unique growing conditions can produce exceptionally complex cups.

Here, that delicate varietal character meets an intentionally fruit-forward fermentation, creating a coffee that is both expressive and remarkably refined.

Dynamic Cherry Process
The Dynamic Cherry process is an experimental anaerobic fermentation designed to intensify the natural fruit character of the coffee while maintaining clarity.

After harvesting, the cherries are floated for density selection before being sealed in anaerobic tanks for approximately 96–100 hours. In this oxygen-free environment, yeast and lactic acid bacteria break down sugars within the coffee cherry, influencing the development of flavor and creating greater depth and complexity.

Following fermentation, the cherries undergo a slow, controlled drying process. The combination of extended fermentation and careful drying allows the coffee to develop intense fruit character without losing the delicate floral and tea-like qualities of the Geisha variety.

In The Cup
The result is a remarkably clean and dynamic cup, with sweet red berries and bright lime layered over delicate hibiscus tea florality. It's vibrant and fruit-forward, but maintains the elegance and clarity expected from a high-quality Geisha. The Dynamic Cherry process brings additional intensity and dimension to the variety without masking its more nuanced characteristics.
