This Natural Mariana comes to us from Diego Robelo and the acclaimed Aquiares Estate in Costa Rica's Turrialba region. One of five exceptional coffees we've sourced from Aquiares this year, this release showcases a pioneering coffee variety paired with meticulous natural processing to create a cup that's both expressive and remarkably refined.

Expect vibrant notes of raspberry, fudge, and elderflower liqueur. Juicy red fruit meets rich chocolate sweetness, while elegant floral aromatics and a silky texture carry through to a beautifully balanced finish.

Aquiares Estate is one of Costa Rica's most innovative coffee farms, recognized worldwide for its commitment to sustainability, quality, and coffee variety research. Under the leadership of Diego Robelo, the estate continues to pioneer new cultivars while producing coffees that showcase both exceptional craftsmanship and the unique terroir of Turrialba.

Varietal
Mariana
is a rare F1 hybrid developed from a cross between IAPAR 59 and a male-sterile Ethiopian landrace. Closely related to the acclaimed Starmaya variety, Mariana represents an exciting advancement in coffee breeding and is among the first F1 hybrids in the world capable of being propagated by seed rather than tissue culture. This breakthrough makes the variety more accessible for producers while preserving the outstanding cup quality F1 hybrids are known for.

Processing
This lot is naturally processed, allowing the coffee cherry to remain intact throughout drying. After harvest, ripe cherries are carefully sorted before being spread across drying patios to begin the drying process. Once partially dried, the cherries are transferred to raised beds where they continue drying slowly over 16–20 days until reaching their ideal moisture content.

This careful approach enhances sweetness, clarity, and varietal expression while preserving the elegance that defines this coffee.

Cup Profile
Mariana shines with remarkable balance and complexity. Bright raspberry leads the cup alongside layers of ripe red berries, while fudge contributes a rich, velvety sweetness without overwhelming the fruit. Delicate notes of elderflower liqueur lift the finish with refined floral character, creating an expressive cup that is vibrant, silky, and exceptionally clean.
