Where previous lots explored more experimental processing, this washed expression lets the variety speak with clarity and precision, offering a cleaner, more defined window into what makes Tres Cogollos so remarkable.

Tres Cogollos is a true genetic mutation of Bourbon, discovered by Germán on his own farm and named for its distinctive three-bud plant structure. It exists nowhere else in the world — and Germán is, quite literally, its originator.

Producer & Farm
Germán Carranza Barboza is a 30-year-old coffee producer, husband, and father of two from the village of Gracias a Dios in Peru's Amazonas region. His farm, El Bebedero — named for the natural springs that supply water to the farm and its animals — sits mostly between 1,600 and 1,700 meters above sea level, an altitude that enables him to work across washed, honey, and natural processing styles through careful hand selection at harvest.

Germán is a young, driven producer with a genuine curiosity for experimentation. His trees, around eight years old, include an ambitious range of varieties: Maragogype, Villasarchi, Pink Bourbon, Marsellesa, Gesha, and more. He is precisely the kind of producer pushing the boundaries of what Peruvian specialty coffee can be — and the discovery of Tres Cogollos may be the most remarkable chapter in that story so far.

Varietal: Tres Cogollos
Tres Cogollos is a spontaneous genetic mutation of Bourbon that Germán discovered growing on El Bebedero. Named for its unusual three-bud plant structure — "tres cogollos" meaning "three buds" in Spanish — it has since been confirmed as a genuinely unique variety. For now, it exists only on his farm, making Germán not just its discoverer but its originator. Should it ever be propagated and planted more widely, El Bebedero will be its point of origin.

Process
Fully washed — a deliberate choice this year to present Tres Cogollos in its clearest form. After last year's more experimental processing, the washed method strips away the variables of fermentation and fruit contact, allowing the genetic character of the variety to come through with transparency and precision.
