This coffee is a washed process, coffee, with a 36 hour fermentation, dried on a concrete patio for 10-14 days. The lot is made up of Bourbon and Caturra coffee varietals. The farm, Los Dos Socios, was purchased in 1990 by Don Concepcion Villatoro Matias purchased his farm in 1990. Over time, Concepcion bought other small parcels, planting them with Bourbon and Caturra plants beneath the Gravilea and Chalum shade trees on the farm. These he separated into many small parcels. Look for some really sweet red fruit driving this coffee in the cup, with plenty of cherry and almost a Red Fruit Punch like quality (like the specific drink, not just a punch), along with some pops of tropical fruits like Guava, and this sweet, rounded finish reminiscent of Butterscotch.
Our importing partner shared this experience with us from one of the roasters they brought down there with them on one of their origin trips, recalling "After we shared a meal with his family and learned more about his kids and grandkids, Concepción proudly led us up a jaggedly steep trail through shade trees and mature bourbón. He insisted on carrying my backpack since I was moving a little slowly post meal. 45 minutes later and at 1750m we got to the vantage point admiring Concepción's farm with sweeping mountains in the background. We fell in love with his farm after just falling in love with his family.” And that’s something we've heard repeatedly about this producer, just his sheer genuine and kind heart, and honestly, silly as it may sound, we think it shows in his coffee quality.
