ABOUT THE COFFEE

IN FOCUS: Ethiopia Halo Beriti — Washed | House

Producer & Washing Station
Halo Beriti is a renowned washing station in the Yirgacheffe region of Ethiopia, established in 2014 and built on a reputation for clean, structured, floral washed lots. The farmers who contribute their harvest to Halo Beriti work small plots at high altitude, yet execute at a level that has earned this station a place on the menus of some of the world's premier specialty roasters and in Cup of Excellence competition circles. This particular lot was exported by the Yirgacheffe Coffee Farmers Cooperative Union, a cooperative structure that supports and connects these smallholder producers to the global specialty market.

Varietal
This lot is a blend of three Ethiopian heritage varietals: Wolishalo, Kurume, and Dega — indigenous varieties grown in the rich biodiversity of the Yirgacheffe highlands. These varieties are deeply tied to the landscape and contribute to the distinct complexity and terroir-driven character that makes Ethiopian coffee so singular.

Processing
Fully washed, with a 12-day drying time. The washed process removes the fruit before drying, emphasizing clarity and allowing the floral and citrus character of these varietals and terroir to come through brilliantly. The extended drying time supports even moisture reduction and a stable, sparkling cup.

Cup Profile
On filter, expect grapefruit, orange marmalade, and jasmine — bright, lifted, and almost effervescent, with a floral and fruited character that's tailor-made for the season. The cup is clean and vibrant without being sharp, with a sweetness that keeps it balanced and endlessly drinkable.
