Working alongside mentors like Sebastian Ramirez and the Trujillo family, these producers experiment with innovative natural and extended fermentation methods to create small, 20–30 kg experimental batches.

Blended together, with a touch of Sebastian Ramirez’s Red Fruits Co-Ferment, this coffee delivers a fruit-forward and chocolatey cup, balancing vibrancy, sweetness, and richness.

The program supports young producers by pairing them with industry veterans, providing guidance on experimental processing methods, and helping scale their innovations while maintaining quality. After fermentations, producers cup their coffees together, adjusting processing to achieve the desired profile.

The result is a lot bursting with sweet red fruits — pomegranate, cherry cordial — and rich chocolate, creating a dessert-like experience in the cup. Every sip represents both innovation and opportunity, supporting the next generation of Colombian coffee producers while offering a truly unique and memorable coffee experience.
