ABOUT THE COFFEE

IN FOCUS: Colombia Young Producers

The Young Producer Program
This lot represents one of the first harvests from a group of young coffee producers in Caicedo, Antioquia, who began their specialty coffee journey just a few years ago. Their story began when respected producer Danilo Flórez shared Chiroso seeds with the group, encouraging them to explore rare varieties and specialty production. With mentorship from Elkin Diosa and continued guidance from Unblended Coffee, these producers have developed both their farming and processing techniques while building a sustainable future in coffee.

Unblended's philosophy is simple: "The future is young." As many coffee farmers retire and younger generations leave the industry, the program invests in producers who have intentionally chosen coffee as their livelihood. By providing mentorship, market access, and opportunities for experimentation, the program helps ensure the next generation of coffee producers continues to innovate and thrive.

Varietal
Chiroso
has quickly become one of Colombia's most celebrated coffee varieties, admired for its floral aromatics, vibrant acidity, and remarkable elegance. Though once thought to be related to Caturra, genetic research has shown Chiroso to be of Ethiopian origin, helping explain its distinctive cup profile. Its rarity and expressive character have made it one of the most exciting varieties in specialty coffee today.

Processing
This lot is processed using a washed method, with an intentional 48-hour whole-cherry fermentation before depulping. This additional fermentation enhances sweetness and fruit complexity without overshadowing the delicate qualities that make Chiroso so unique. The result is a cup that remains exceptionally clean and transparent while gaining additional depth and vibrancy.

Cup Profile
Expect a lively, layered cup with notes of mandarin orange, mango, and white tea. Bright citrus leads into tropical sweetness before finishing with delicate florals and a refined tea-like elegance. The result is vibrant and expressive while maintaining the remarkable clarity that defines both Chiroso and expertly executed washed coffees.
