A classic, approachable Colombian coffee from Finca Las Nubes with bright, fruity notes of peach candy, fresh raspberry, and cooked pineapple.

From Finca Las Nubes, we introduce what we believe is the perfect representation of a washed Colombian coffee — clean, approachable, and bright. We're tasting all of the intentional care put into every part of this cup with every sip, from growing to harvesting to processing.

A go-to, everyday cup, this coffee has a bright sweetness. With tasting notes of sweet peach candy, raspberries, and layered with a deep, developed cooked pineapple, it's a reminder why washed Colombian Caturra became a benchmark in the first place. It may appear simple on paper, but one that’s executed with precision that is a great example of what makes Finca Las Nubes the renowned farm that it is.

ABOUT THE COFFEE

IN FOCUS: Colombia Las Nubes

Producer & Farm
Las Nubes is no stranger to the menus of some of DOCR's favorite roasters, and we’re so excited to be able to share this beautiful washed Caturra. It's an excellent representation of a classic varietal with traditional processing that is executed so well.

Finca Las Nubes sits just outside Pitalito, high above the Laboyos Valley, sprawling with Caturra, Pacamara, Pink Bourbon, Geisha, and even experimental blocks of Mokka and Sudan Rume varieties. These plants are nourished by the cool nights and mild days that make for dense, expressive seeds.

Run by Claudia Samboni, whose work at Aromas del Sur has quietly shaped some of the most celebrated coffees coming out of Huila over the last decade, is known for meticulous processing, clean structure, and a commitment to varieties that push Colombian coffee forward.

Las Nubes has caught the attention of respected roasters and competitive programs, earning recognition alongside Cup of Excellence-level selections from Claudia’s other farms.

Varietal & Process
This lot of the Caturra variety was selected for a washed processing method. Caturra cherries were harvested at 20–22 degrees Brix — the measurement of the sugar content of the cherries — before being floated to remove any bad cherries, then de-pulped. The pulped coffee was then fermented for 40 hours and followed by being fully washed. Finally, the coffee was moved to the drying area where it dried for 18–20 days until it reached the target moisture content.

It’s classic Huila in the best way — a stunning example of a coffee that has nothing behind it but the purest representation of exceptional care in each step of the process.

Cup Profile
We’re tasting sweet peach candy, fresh raspberry and a deep, developed cooked pineapple note that comes together nicely. It’s a very clean, sweet cup —  pretty approachable, but still quite bright. We're excited to welcome this coffee to our menu, and we hope you'll enjoy it too!
