Jairo Arcila owns and operates Santa Monica Farm in Quindio, Colombia. Our original listing highlighted his commitment to growing and processing exceptional coffee and his care with unique varieties.
The original listing described Papayo as genetically close to Ethiopian heirloom varieties and named for cherries that resemble tiny papayas. This offering combined characteristics reminiscent of washed African coffees with a classic Colombian profile.
Cherries were harvested according to strict ripeness criteria, floated, and hand-sorted to remove defects. They underwent 30 hours of underwater fermentation before pulping. The parchment was then gently washed and dried under temperature-controlled conditions until ideal moisture content was reached.
The resulting cup offered grapefruit, blueberry, and vanilla, with refined balance, sweetness, and crisp clarity.
