IN FOCUS: Colombia Jairo Arcila Strawberry Maceration

Produced by Jairo Arcila at Santa Monica Farm in Quindio, Colombia, this single-variety lot consisted entirely of Pink Bourbon, adding rarity and complexity to the offering.

The process involved 72 hours of dry anaerobic fermentation with the pulp on. Wine yeast and strawberry maceration were added during fermentation. The cherries were then pulped and placed on raised beds to dry with more ripe strawberry until the ideal moisture content was achieved.

Strawberry led the cup, supported by a whole fruit basket of tropical lychee, stone-fruit peach, and a touch of mandarin. Rose and chamomile florals tied the profile together. Fragrant like a fruit tea, this coffee carried those aromatics into a balanced, super-juicy cup.
