This decaf lot is processed using the Mountain Water Process, retaining the coffee’s full flavor and nuance while removing 99% of naturally occurring caffeine. Expect a sweet, balanced, and approachable cup, highlighting the signature clarity and character of Guatemalan coffee.

Finca Santa Isabel has a long-standing legacy of careful cultivation and organic practices. Alex Keller understands that organic methods positively impact both the environment and the flavor of the coffee, producing a cup that reflects years of experience and attention to detail.

The Mountain Water Process (MWP) decaffeination method uses pure spring water from Pico de Orizaba, the highest mountain in Mexico. Green beans are steamed to create a coffee extract, passed through a filter to remove caffeine, and then returned to the beans. This chemical-free process preserves all the flavor and complexity inherent in the coffee, resulting in a decaf that is virtually indistinguishable in quality from its caffeinated counterpart.
