ABOUT THE COFFEE

IN FOCUS: El Salvador

Producer & Farm
Finca La Montaña is a six-hectare family-run farm in Chalatenango, operated by Raúl Ochoa alongside his son, Alexander. Raúl began cultivating the land in 1986 after inheriting it uncultivated, planting his first coffee seedlings and gradually expanding over the years. Today, the farm grows Pacamara, Bourbon, Pacas, and SL28, with a strong emphasis on ecological stewardship and organic fertilization.

Legacy & Recognition
La Montaña is one of El Salvador’s most celebrated farms, with consistent appearances in the Cup of Excellence since 2004. Its breakthrough came when Raúl’s Pacamara earned first place — making La Montaña the first farm from the Alotepec–Metapán region to win COE and the first to do so with Pacamara. This achievement brought international recognition and cemented the farm’s reputation among elite buyers worldwide.

Varietal & Terroir
This lot features SL28, a Kenyan-born variety prized for its vivid acidity and fruit complexity. Rare in El Salvador, SL28 takes on a unique character here, shaped by the country’s high-elevation, volcanic soils. The result is a profile that’s unusually dense, sweet, and fruit-forward for the variety — a compelling expression outside of East Africa.

Processing & Cup Profile
Processed as a natural, this lot emphasizes SL28’s inherent fruit intensity. Careful harvest selection and extended drying allow sugars and aromatics to fully develop, resulting in a cup that’s bold yet balanced. Look for raspberry, orange sherbet, and layered tangy sweetness that evokes pineapple upside-down cake, all carried by a vibrant, juicy structure.
