Colombia Andres Cardona - Red Sunset | Experimental Semi-Washed

$24.95
Size: 12oz

This special coffee comes to us from Álvaro Andrés Cardona Molina, who is part of the Young Producer Program run by one of our exporting partners, Unblended Coffee. The program highlights those who have chosen passion over other options in life, and promotes “Making Coffee Producing Young”, in a time where many coffee producers are aging out of the hard work of coffee farming and many young people looking to other industries. Andres is a dreamer and a go-getter! He has been working with coffee since he was 12 years old, as it is a family tradition. Currently, he manages his uncle’s farm, Villa Lucía, where he cultivates coffee varieties such as Colombia, Castillo, and Cenicafe. His dedication and curiosity have led him to experiment with new coffee processing methods, always seeking new ways to make his coffee special.

The lot is made up of Castillo and Colombia coffee varietals, and processed with his signature processing method he calls “red sunset”. This process is some Semi-Washed brilliance, and is the result of his curiosity and desire to learn. It involves an extended fermentation in cherry inside sealed tanks with an addition of coffee cherry juice from previous batches. This submerged anaerobic fermentation, makes a balanced and homogeneous cup with an outstanding aftertaste.
Look for exceptional vibrancy and explosive fruit notes in this coffee, like Hawaiian Punch, some sweet blood orange, and a refreshing strawberry daiquiri. Super juicy, super sweet, super clean. If it weren't for the explosive fruit forwardness of the coffee, you would not guess that there’s anything anaerobic going on, and that’s in part due to the hybrid process really in that its not an overly funky anaerobic
