A remarkable discovery from producer Germán Carranza, Tres Cogollos is a coffee unlike any other — a naturally occurring Bourbon mutation found on his own farm. This release marks the second in our series from young Peruvian producer Germán Carranza — a farmer whose dedication and experimentation continue to redefine what’s possible in coffee. Following the release of his Natural Geisha, we’re thrilled to share Tres Cogollos, a coffee born entirely from Germán’s own discovery.

While Geisha represents rarity through legacy, Tres Cogollos represents rarity through innovation — a brand-new varietal, identified and named by Germán himself. The result is a coffee that feels alive in the cup: bright, juicy, and vibrant, offering an entirely new expression of his craft.

Producer & Farm
Germán Carranza Barboza is a 28-year-old producer, husband, and father of two from the village of Gracias a Dios in Peru’s Amazonas region. His farm, El Bebedero, draws its name from the natural springs that sustain the land and its wildlife. In partnership with Yellow Rooster, Germán continues to experiment with rare varietals and fermentation techniques, driven by a curiosity that’s earned him recognition as one of the region’s most promising young farmers.

Varietal Discovery
During his work at El Bebedero, Germán identified a true genetic mutation of Bourbon, distinct for its three-budded plant structure — a trait that inspired its name, Tres Cogollos (“three buds”). This new varietal is entirely unique to his farm, making Germán not just its discoverer but effectively its origin point — the “grandfather” of this coffee’s lineage.

Processing & Profile
This lot was processed using an anaerobic washed method. The cherries underwent a sealed-tank fermentation to enhance sweetness and deepen fruit character, before being washed to preserve clarity and balance. The result is a cup that bridges the vibrancy of experimental fermentation with the crisp cleanliness of traditional washed coffees — lively, juicy, and sparkling.
