Ratnagiri Estate was founded by the Patre family in 1927. Ashok Patre took over in 1989 and transformed the family's production. The estate lies in the southwestern Ghat foothills, where the mountains meet the Deccan plateau, near the birthplace of coffee in India.
Ashok's approach focused on elevating production standards through avoiding pesticides, using natural fertilizers, exceptionally selective picking and sorting, and experimental processing. This offering showcased the work of a producer helping advance specialty coffee in India.
Carbonic maceration draws inspiration from wine production and involves placing whole coffee cherries in airtight containers. This lot introduced a selected yeast strain to aid fermentation and carbon dioxide production. Following fermentation, the original listing described waterless depulping and slow drying as part of its natural processing.
The result was a clean, sweet, expressive cup with port wine-like character, mulberry, deep red fruit, and dark chocolate.
