This coffee is a hybrid variety, generated by crossing Sarchimor T-5296 with a mild Rume Sudan variety. Rome Sudan is an incredible rare and sought after varietal, much like Geisha in rarity and value. The crossing of these varietals gives it a bit more consistency. 

The variety also lends itself well to the processing, and was specifically selected for anaerobic natural processing for its high mucilage content. The cherries are floated and washed with fresh water but not depulped, then placed in stainless steel tanks with a one way air valve to start its anaerobic fermentation for 24 hours with the natural microorganisms and yeast present in the coffee cherries. After fermentation the cherries are then washed again and dried in solar dryers, first on a ceramic patio, and then moved to layered beds.
This is an incredibly wild coffee. VERY winey, VERY fruit forward, almost boozy in its juiciness, with intense notes of blue raspberry, grape juice, sparkling grape juice, a Prosecco-like note, with some honeydew melon. It’s incredible vibrant and complex, perhaps a bit less elegant than the African Washed Esperanza. Very much an experience of a coffee!
